[00:00:30] You're always a part of the DCPC family and in the wheelhouse. Love watching your stuff that you put up on Instagram and whatnot. Cooking with Dar is a... Oh, yeah. It became one of my favorites pretty quickly. I do enjoy making it. I, uh, you know, I'm bummed. We should have waited 20 more weeks and that could have been on episode 301 and made the, uh, or something like that. Roughly, there would have been a full, full circle. That's true. But no, it's completely fine. I, I always get a kick coming back here because it's like a weird time stamp in my life and going back to see what has changed.

[00:01:01] Um, how I've grown, how you guys have grown. I mean, look at us. We're, we're having sparkling waters on the show. What is this? A lot has changed. I actually enjoy these more than alcoholic beverages now. Like it's, it's gotten to that point where it's just more refreshing. They're good. And I actually, you know, when I first quit drinking on the show, Dar back in April, I wasn't sure how it was going to go. Like I thought I was gonna be boring, lame, not, you know, witty and all that stuff. A couple episodes later, I started to enjoy podcasting more sober than I did drinking. Like, it's always fun. I was going to be a little bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of a bit of

I'm like, Oh, I remember. I remember. I remember one of my content creators back in the day. He was at like a convention and he did this thing where he was given out his posters and you could buy them for like 15 bucks or he would give it to you for free. all you had to do was give a 30 second spiel to him of why you deserve the poster and why you're

[00:02:00] the best but you could not you could not stammer you could not say uh and you could not pause okay and the point he was trying to make is that it's like everyone thinks podcasting is so easy but like it is hard to kind of roll with that and i was thinking about that over over time i was like well i deserve this poster because well uh oh shit you're like fail yeah uh well back when i used to do streaming it was kind of a similar thing and to your point have like uh because i used to drink a lot before the stream too sure and looking back at it it was like okay yeah i'm having

[00:02:29] fun obviously and i wasn't serious about it so it was good but like going back there were some times where i could tell where where i'm a little bit over that edge where it was like i could have dialed it back there a little bit you know and that's the worst part too is that if if anytime i've done any kind of we'll just call it performance anything on stage or whatever like and if i start to goof um and i've been drinking that's a recipe for disaster because all of a sudden it's like oh

[00:02:55] is it me is it is it the beer like and then you start thinking people are they can tell that you're drunk or something and then that gets in your head exactly exactly so what do you do in that scenario or it hasn't i'm assuming this has happened before not not me in any like okay yeah it has but just to a level where like i was always in control if it's a stadium i could cut it off earlier or something that's true and and it's always at a point where it's never like obvious either like

[00:03:21] it's not i'm stammering drunk anywhere it's just like maybe did i have one beer too many like starting to get a little like uh for me it's like if i if i haven't drank for a while and then i drink like two really fast because the first one goes down it doesn't matter if i haven't drank in a month that first one always goes down really easy for some reason so you get your lips you know and so i always want the second one and then i back them up too quick and then all of a sudden like

[00:03:45] you catch a little surprise buzz that you haven't had and you're all like uh is this noticeable yeah you know it's it's part of the change man and i think a lot of 2024 for all of us particularly i mean it was so weird listening to you guys talk about i think this was your 100th day sober kev where yeah um i listened to that episode it was the one where you guys recorded it was just the two of you and um and i listened to it and it was right when i was like thinking about like i need to cut back

[00:04:12] like i don't really want to drink that much anymore and i heard you guys talking i was like i can't believe this like if kev is able to do this like i can i can cut back i can go a day i can go a week like yeah and um and it's crazy how how much even if you're just you know whether it's just drinking lightly every day or just making a change slamming slamming 12 racks a day whatever if you're just drinking every day and you stop that it's amazing even after just one week um whether it's

[00:04:37] stone cold or just cutting back by 50 or whatever yeah how uh how much more energy i had and it really was a quick um it was a quick wake-up call i'd say wow um obviously i still enjoy my beers uh now and then beer is delicious of course yeah do you ever mess with the non-elks like the like bush na or duels i i did once uh not a fan i just couldn't get over the fact that i was drinking canned bread

[00:05:02] and like it was like all the flavor just all the flavor none of the booze yeah i couldn't do it i mean nothing against it but the the flavor doesn't really do it for me yeah you're just not in for that it's working well for my brother he's been sober now over 100 days oh wow yeah solid job matt yeah my brother is crushing it with that so there's been like a huge movement with all of it over the last close to a year you know 2024 was kind of the year of change and then in november i don't know if you've caught the the grit movement that i started you know i've people probably heard me say this on

[00:05:30] every episode now since it but if you're you know just tuning in to see this solid lad i'll tell you the grit movement is the guts resilience initiative tenacity i was ready to walk away from the show i wanted to quit it i was at a low point i was going through some personal stuff major changes professionally and then art and i went to this thing called a grit together we met these amazing people and then the whole energy shifted recommitted refocused and we didn't like we were kicking the can i was yeah i was like dude we need to go to this event i i can tell this whatever this was

[00:05:57] about to be as a game changer for our energy with all this and and kev was kicking the can and then so much so that i the day of didn't even want to go and then he was like oh no we should go now so then he was telling me and then it was true like that night a lot of things changed yeah and even if you like you said you do a what tuesday oh a tidy tuesday tidy tuesday because i was telling him about simple sundays oh yeah and motivational mondays or whatever i'm like have fun with it and he's

[00:06:24] like so i'm doing tiny tidy tuesdays tidy tuesdays so tell us clean well it's really uh arc got this in my head i think this was on episode now i forgot which episode uh from raw talk it was but i listened to it and he talked about you know if you you know whether whether you're trying to cut back or quit altogether at the very least it's like pick a day or if you already have a couple days like me i wasn't drinking every day but um but i was like let's let's add some consistency into the life and i was

[00:06:51] like i'm gonna pick one day on his suggestions like pick and day for you it was like motivation monday or meditation monday or sober sunday meaningful monday or something just some kind of shit as long as it has a name you're golden yeah because now we can lean on that name you're like shit no it's tidy tuesday i can't yeah and um and tuesdays are normally a day where like i don't mind having some beer but um it was the day before my doctor's appointment and i knew i had to fast and some blood

[00:07:16] test and i was like i want to go in and make sure i'm nominal and so i uh that tuesday i was like bored i had finished work and i was like what am i gonna do and i was looking around the place is a mess and i was like i'm just gonna clean up and i just cleaned for the next like couple hours put some music on yeah the room the room looked better and i was like i'm gonna start this tidy tuesday as it is so yesterday i put away the christmas tree cleaned up the scraped up the uh oven a little

[00:07:39] bit uh bunch of just like whatever just every day pick a room pick something who cares dump a glass of milk on the floor mop that up if you need to i don't care like i like it though the consistency i think is the most important thing that i'm trying to bring into 2025 it's just in general um that's something that i've lacked a lot in my life i have a good job uh things are going very well um finances are in

[00:08:05] order like my life is fine but it's it like every week it's just a whirlwind of stuff that needs to happen and uh i really i was like i just i just want to have a schedule again in general and uh it's been difficult to get back on that train you know besides work work you get up you go to work come back uh and but what are you really doing exactly do you leave the house to go to work i do like three

[00:08:34] days out of the week once a week i usually work yeah usually i work from home once at least you're getting out it forces you have to go somewhere i have to i cannot work from home in long for long periods of time i go nuts yeah and i just don't get as much done i get distracted too easily which with other things you know it's hard for me it's hard to stay focused on a project at the house yeah unless it's podcast related i'm really into it or something so i feel you on that for sure but going to the scheduling piece right like every day could be fun day monday fun day tuesday fun day some

[00:09:02] people live that life but i think it's good so you have your tidy tuesday maybe you know wash it up wednesday i mean i don't know what else we got going on the rest of the week so so if you do a cooking video on a friday night let's say you're doing some creation in the kitchen's a wreck are you not cleaning it till tuesday no okay i was just i was making sure no no i mean the the point the point for me is to make positive like make progress in the house overall i like this isn't just like all right

[00:09:29] the dishes are out time to put them away it's more like more permanent stuff so this time it was put put away the christmas tree it's time to put away the tree yeah i agree with that and then i i scraped the hell out of my stovetop because there was just a lot of grizzle and yeah i thought it was satisfying oh yeah it was awesome take one of those uh razor blades and uh and that uh super grease cleaner and just go at it look clean i was very happy that's what i mean by then you're you're taking care of your

[00:09:53] shit like when you start cleaning and it actually turned into like a ceremony for me because i i started drinking less you know i was trying to take control of my life i was losing weight i was like trying to do all this stuff and when you keep a clean house it helps you keep a clean mind oh yeah like when you declutter get rid of old shit that you don't wear anymore and you like actually clean out shit that you don't use then it frees up your your your headspace so that was one thing that was

[00:10:23] really awesome and it became like a ceremony of me respecting my clothes after i washed them i would put them in the dryer and then i'd fold them i'll just put my laundry away immediately and it was like a way of honoring and respecting my shit and then on top of that like i like the the cleaning tuesday the tidy tuesday because if you do like a serious clean once a week just one one like actual real clean a week not a tidy up not a quick vacuum but like an actual clean deep clean yeah a couple

[00:10:50] hours or something then when you come back it's way easier and it's so much easier to keep it clean when you clean off to maintain it yeah that's where you use my 10 minute rule so do you remember my 10 minute rule dar uh no right that's fine i wouldn't expect so i've said it on god knows how many episodes i don't remember what numbers they were but so the 10 minute rule simple when every night when i get home i put 10 minutes on the clock see how much i can get done i kind of race the clock a little bit take the trash out put away the dishes maybe start a load of laundry you know take care of some other

[00:11:18] odds and ends just things that before i go sit down and play video games or do whatever i want to do i do 10 minutes of action every night and it's amazing how much you can get done in those 10 yeah just like committing to and especially when you have that consistency of doing every night or however many times a week uh it's it's it's very helpful because like like i was saying having a good house space is monumental and i think that it's nearly impossible the the old saying of

[00:11:48] like having reasonable goals you know it's like i'm gonna clean the whole house today no you're not shut the fuck up you're not gonna happen yeah but one room you know in a couple hours like my closet is next it's it's just a mess needs to be organized there's a lot of clothes i don't wear that you know stuff like that right and i've been in my house long enough now that it's it's not a dumpster but there's enough like relic stuff around that passage of time it just sits there and it's just never

[00:12:16] going to get touched again i'm pretty sure that if someone came in and magically knew what i honestly didn't need and just took it all and threw it in a dumpster you wouldn't even know i would freak out for like a day and then realize very quickly that oh i actually don't care about this at all yeah i don't like to be wasteful i hate throwing out if something is like useful objectively i hate throwing

[00:12:41] it out what would be one of these uh obscure items what's a good example like something that you think could probably get thrown away but you want to keep because there's perceived use like maybe an old can opener well yeah that's an example i mean it doesn't necessarily mean that i have to hang on to it i think the answer to 99 of these things is i should just donate it okay because it's the wasteful part that you want it's the wasteful part that sucks it's like this is a useful thing uh like i can use

[00:13:08] this for example i had this i got this from work a while ago that they uh they gave us a i think this was during the covet era they gave us a pretty it was actually a really neat gift it was like a small telescope that attaches to your phone so you can use it to like look at the night sky and such and then we they gave us a certificate or something that we could name a star which was neat that was cool that was happy uh i don't use this telescope at all and i probably never will again you know it's

[00:13:34] great i appreciate it was fun for like one time use but if i really want to do some stargazing i'm gonna get something that actually makes sense to use and so now this is just sitting in my office i don't want to give it away i don't want to throw it away it's perfectly useful but like and it's also like it's mine it's yeah you know i was given this i can't just give it away as it turns out i completely can so yeah i just don't want to the rule the rule is that i heard

[00:14:00] one time is like and this is going extreme if you want to go extreme then you like pack everything you have into boxes like you're about to move and then what you are using at six months maybe you give it a year but then anything still left in boxes you just get rid of it yeah because there is a lot of stuff and like for years and years and that's going extreme but like you just have to be honest with yourself if you don't want to pack up your whole apartment or house then like you just have

[00:14:29] to be on like have i really used this way i was holding on to clothes from high school until my like mid 30s like why did i have old socks from high school and like and like shirts and i know i still got old jackets that like i never wear i haven't worn them in season after season yeah so like i feel you sometimes you just hang on to stuff but like we really don't need it have you guys ever had a

[00:14:55] article of clothing that has sat so long in your closet that it like smells like dust like it's not covered in stale yeah it smells stale exactly like there's probably like i think more hats because i have so many hats and like if i pull out a hat i'm worn a while i'll be like this thing smells kind of funky yeah exactly it doesn't smell bad right but it just i like it just smells like old yeah dust that's why a lot of folks put like mothballs and shit in their closet i don't like that smell it smells like time

[00:15:25] mothballs are terrible yeah i can't stand that smell it reminds me like going to grandma's house and getting the broom out of the closet and reek of mothballs yeah not a good smell i gotta throw some shit out yeah that's the only good thing about moving yes right because i've moved a lot in the last five years like every time i moved i got rid of so much shit and then you accrue more shit in your new place and you get rid of shit that's like the only positive to moving it's i wish i was more

[00:15:49] of a minimalistic guy and i i feel like i'm more am now as i'm watching my spending uh but but yeah it would be great to i'm working on that one room at a time getting stuff out getting stuff i put it in a giant box uh that's just going to be for donation mostly clothes related stuff nice are you like an arc guy or a goodwill there's a goodwill like in walking distance of my house so i usually see and i've heard that those guys and i don't know this is true or not but i've heard they've gotten a little

[00:16:15] bit stricter like they don't want people's junk oh i see yeah like you like bringing the clothes washed and they'll deny they won't take all the clothes like because people just oh really right yeah huh yeah they've got a little tighter because people were just leaving like broken shelving all this shit like what are we going to do with this right right i guess that makes sense i didn't think about the shirt i thought with clothing they would end up just donating in some form or fashion i just put them in those bins you know those big bins yeah yeah and then they just take the bin yeah just

[00:16:42] toss it in the bin yeah but no look if you're donating no socks no underwear no one wants to use socks or underwear that's a good that's a good point i keep my uh i keep my old tattered underwear like my boxers it's always it's like a nice piece of cloth got blurred nose you know you really i do i mean i'm not saying there's like a stack of old boxers on my desk let me grab a tissue no but like uh uh for like a lot of bits or even like costumes or something in the holidays

[00:17:08] just having some like cloth or something has has come not necessarily just the the boxer itself i mean it's clean it's been washed but like you know it can get ripped used for a bit or uh or for like costumes or this or that or just like generic cloth i have like a big bag in my laundry room of just like junk cloth oh yeah but see those come in handy rags you know like if you get a like bleach or something like you the rag gets fucked up like who cares yeah exactly let's go around the trash after this yeah no it's good to have shit like that on hand did you have you had a costume

[00:17:38] part this year didn't you and you invited us and we didn't show up we're terrible spooky party 2k we didn't make it spooky party 2k 24 man did it go pretty good it was an absolute blast we had a we had a lot of fun really went back in a full swing after the covet era it's every year kind of picked up a little bit more a little better i'm pretty careful with it it's usually some friends and some co-workers and stuff i i put a lid on it the second spooky party which was the last one we

[00:18:02] had before the covet era uh that was good but my roommate invited like just the whole town yeah and the facebook invite list was like close to 95 people in your house yeah i was like dude you have to cap it and i did luckily we didn't have that and everyone was nice but we we had about like 50 people in and out or 60 people i think that would give me anxiety it was a lot like you have to like lock your room up and shit yeah you can't you can't trust generally these people are and i got and i lucked out but i

[00:18:29] remember thinking about the next day i was like that could have gone horribly wrong oh yeah and so now this year i think we had about i forgot i think we clocked in about 40 40 people but it was people that i knew okay we had like a big um we had a big picture uh i don't know if you guys saw it on my yeah i checked that out yeah it was like i always i after last year i started doing this where every year we would just get everyone in the garage and take like a big photo got everyone in it i mean

[00:18:55] here's the thing like i used to be kind of like uh screw pictures you know i'm too cool for pictures but then once i realized that that was actually lame and it's not that hard just to get everybody together and then everybody appreciates that picture later you're commemorating the moment everybody appreciates it later i mean it goes back you know what the 70s when the codex first started coming out you know even before that it was the uh what were they called polaroids polaroids you

[00:19:22] know those were cool when they first count people you know you had to wait right and it makes a difference like that that little time stamp those memories are important i think they get more important as the years go on and like yeah i worry about my phone because i have a lot of stuff backed up to the cloud yeah it's great but now it's starting to span like five six years of good pictures and i'm like i need to find a way to just archive this terror just get a like terabyte byte hard drive yeah you want something tangible you mean yeah something yeah that's just put it up on

[00:19:50] that cloud just put it on that and then that and then you could plug that into anything in the future yeah are you an android guy what now are you an android guy i'm not i'm an iphone boy okay i mean not really i mean my family has it and so i was like all right i'll get one too it just makes life easier yeah so yeah i'm not gonna i won't go off they're getting they're getting more uh they're getting more integrated like you see now you can see red on green text yep and so i was like okay our rcs messaging finally apple finally came around okay good they finally came and said all

[00:20:16] right we'll play nice in the sandbox there we go you know so so far so good on that all i think is apple bottom boy okay all right it's a good phone i think yeah yeah even though i'm like an absolute pc dude i hate using apple apple computers i'm not an apple guy see i originally bought an apple computer for logic pro studio which i thought was top shelf mustard um recording equipment it was and

[00:20:41] it still is so like i have a desktop uh mac but yeah i got the android in the pocket so you're saying that you don't like the the macbooks no that's just because i've always been a windows boy okay and like i've always been used to that interface it's it's nothing it's nothing personal i just like it i know how to use i built my pieces i've always run with uh with windows os and so i don't know what he's laughing about but is that all i was gonna say is gonna have a problem here most apple people are like apple

[00:21:10] through and through yeah you know like my buddy's like oh it's the best everything else is shit like they pedestalize apple as the best there's a lot of good shit on the market well it synergizes really well if you have the pad it does the pause the everything syncs up i get it i get it it's fine it's marketed well they were smart they made a lot of money well and their hardware is really good there are a lot of proprietary stuff so they own the software so it's harder to break in like like there's benefits to both and um you know one thing that always kind of disappointed me though

[00:21:40] is that you couldn't play good video games on apple desktops and stuff like all of it is on pc like all the greatest computer games are on pc and in order to play that on a mac you have to download like boot camp and share the hard drive with windows and macintosh and like you're running you end up running macintosh i mean you end up running windows on the macintosh yeah it's a

[00:22:05] hackintosh yeah i was doing that i was doing that really does that i didn't know that yeah i was doing that you have to like split the hard drive and dedicate space to each uh operating system and stuff they need to start doing some more like what they're doing with the rcs messaging is a good start i'd like to see them do what they're doing with like playstation xbox can now play each other online yeah they're more like they're playing nice in the sandbox they're not so much this is mine that's yours it'd be good to see you know the macbook start to do that with the example you just provided

[00:22:31] yeah tell sony that they'll probably have some words for like games like yeah no how about how about no yeah how about you go buy my hardware so so do we think that i don't know how much y'all know on this maybe dar more than kev probably but um so microsoft xbox they bought um it's the studio that makes skyrim and all those bethesda so they bought that in hopes to create

[00:22:57] create making that like exclusive for those consoles but when elder scrolls 6 finally drops is that only going to be on xbox because that's that's up to them that's crazy that that sounds crazy to me there they've been there's been a a lot of success and failure on that front like i don't know if you guys know hell divers oh yeah this was an absolute slam dunk of a game from independent

[00:23:23] studio but it was managed under sony and then sony decided to make the foolish move of forcing everyone to just have a playstation account um and so instead so you couldn't just go straight from your steam account you had to make a playstation account and migrate your character over and just use that network it didn't change anything per se but it was they were they were gatekeeping the game

[00:23:51] to for like in that fashion of getting people to go on the network and just having an account for why i i don't know it wasn't i think people made a bigger deal out of it than it really needed to be like just make the freaking account takes like two seconds right but it was i think just the fact that they were um that they were forcing people to do that otherwise it was like well either you do it you don't get to play the game and lo and behold their uh player their player count just dropped

[00:24:17] so so a lot of people bailed yeah they were like no i don't want to do this or they just lost interest wow there were some other factors into it too but like yeah they like messed up with the guns like they like yeah came out with but they fixed those updates so i never played this game but i watched a lot of it because i thought it was so cool looking it's like starship troopers it's like a modern version of that but a different take and it's like all about democracy and and uh it's it's

[00:24:42] cool as adam selensky uh you know josh's brother got he he was showing me that nice but that game just looks good it's like a fun game to watch right right yeah i've never seen it i don't know what it's about i it's a did you ever see the movie starship troopers i did i mean a long time ago yeah it's like fighting the bugs yeah fighting the bugs it's centered around like it's that sort of style so it's super earth okay and you're soldiers that are fighting for democracy and bringing democracy

[00:25:09] around the galaxy they don't ever actually explain why the bugs are bad just like in the movie same with the robots it's just like no we have to take over okay for to spread democracy and they have the like super patriotic tone with it and it makes for a lot of i mean it's when you lean into it's like i'm doing this for super earth yeah i'm doing my part yeah and then uh and then you drop in with a team of four like out of the sky like uh in these little pods straight through the atmosphere and slam

[00:25:36] into the ground and then all right let's let's go kill some let's do it aliens yeah and starship troopers was one of my favorite movies growing up i i probably watched that yeah that must have been almost one of my most watched movies ever growing up yeah fun movie absolute fun and the exact same premise of like no one really asks it's like it's a pair it's uh it's a parody off of like war like the war premise of no one actually sits down and is no one sympathizes with the bugs ever no one ever

[00:26:05] in that whole movie is like wait why uh why are we doing this yeah exactly are we doing this to destroy the bugs they just know destroy the bugs that's it that's the mission like all right yes sir i gotta watch that again that movie that movie is awesome it's got to be streaming but the second one just watch the first one yeah i didn't know there was a second don't watch don't watch the second one yeah when when people say that i usually take their word for it some of those sequels just how do you

[00:30:57] seen red eye reviews no oh i think i have maybe i've seen some nostalgia critic too but like i've seen this red eye reviews cat he does really like pair like he makes he did his bread and butter off of seagal like he watched all the seagal movies and was just dogging on seagal and then he like went into like you know jean-claude van damme and like like so he's been kind of segregated like that but those they're great and honestly you are good at making content the movie clips is a lot of work i believe

[00:31:27] because you have to like find the clips and like put the commentary and there's like a lot of editing there make sure there's no uh copyright infringement or you don't get flagged by youtube and so on and so forth that's a whole battle in itself buddy exactly it's a and so it's it's it's one of those little ideas that it's really it's it's purely just for me i don't care to grow a following i just want to do it because you enjoy i just want to do it no yeah then you should do it what is it movie time

[00:31:51] with dar watching with dar i don't know what dar i it's theater time with dar well and this brings us into cooking with dar okay yeah which for for those of you who've never seen it which is most probably cooking with dar is a mini series that i do usually just on my story unless it's really good then i'll save it as a real uh that involves a mildly uh a mildly out of shape guy attempting who can't cook

[00:32:20] that well attempting to make decent recipes from famous chefs the concept really is quite bland on its own but i have a lot of fun with it uh bring some friends in and try to make something that i i genuinely want to make it's entertaining and it is entertaining and so i i wanted to it's funny before like last week before i was talking to art about this and i was like i should try and get like

[00:32:48] a demo reel out and just something so that i can plug this and have and have a channel ready and i had everything i started ramping up and i and i had nothing i didn't have any sort of sound hardware whatsoever and so i actually rigged up my yeti mic that have on my desk with like a very long usb cord that i was just gonna hook up to a laptop and we'd use for the audio and then just i have a decent iphone uh put it on 4k video and just shoot with that audio there and i have a buddy uh that is

[00:33:16] pretty good at editing software he can mesh together and i was like i can slap this together and i was like i can't even hold this mic it's just like a brick what am i going to do with this so we we thought and i'm still going to use this as a bit but i duct taped it to like the end of a broom stick i was gonna have my guys like hold it like a boom mic boom mic and so and at the last minute uh the day before i was going to go up to shoot i i couldn't get the thought in my head that i was like

[00:33:44] because this was on sunday that this would have happened okay last sunday and i was like there is a there's a difference between kind of rigging it together and improvising stuff that we do on the show and just rushing content and this feels rushed and so i pulled the plug good and it just i didn't feel genuine and i was like i knew i could get something out but all of it just didn't

[00:34:10] make sense to me to me it was like the best case scenario was we get we get good audio get good video we'll clip it down that's pretty much all we have time for mash it together publish it to youtube uh make a channel and then have you guys plug it that was the initial plan and i was like that just sounds a rushed and be super lame like why and and this is this that's a moment where i needed to step back and i was like i want to do this i know i want to do this i don't really and and i thought

[00:34:38] to myself and like all of the youtubers that i've watched and all their different styles you know moist critical meat canyon uh the even the big guys like pewdiepie and some of the editing tech that they use and styles and the humor combined people are good out there there's some really it's hard to compete like the content creation on oh yeah like there's getting better and better it keeps getting better and better and like i'm not going to pretend like i can compete with these guys like i need to hire my own editor for that and but but to start small i did want to take my time and i was like i

[00:35:06] i've been around since uh like moist critical i started watching him when he had like 20 000 subs and same with boogie2988 even though he he's falling off quite a bit now um but looking at how these channels grew i i thought to myself like i know i've been around the block i've been enough of a youtuber or youtube goon to uh learn a trick learn the tricks of track i don't have to climb the whole

[00:35:31] ladder and learn as i go like i can start with a decent foundation make a good thumbnail some decent like some decent audio um i want to be able to add my own like little effects if i curse on the video i want there to be a little hot dog emoji and like a trumpet sound i don't know like yeah i was like i was like bleeping out raw talk to i was trying to make it more pc yeah and i put up like anytime i'll say shit or fuck or like a smiley face no it was just like all the the amper stamps and stuff it was like

[00:35:58] yeah something like that like i want to be able to it was fun yeah and i do believe that i i'm doing it for fun but i also know that this has to be something that i feel is worth watching and really needs to be a step above what i've produced on the stories and on instagram and then so my goal is to produce like two or three reels like from start to finish how long i that question gets determined now that

[00:36:28] i think gets determined by the first set of like the first video yeah let's see how it goes because if it's going to be longer than it's youtube if it's if i can snip it down like three minutes or form um or something like that then it could be then it's better off as a reel right um and i figured i would at least what he's laughing because i'm like i'm going oh he's always fucking into the fern over there yeah this mic etiquette like i have to clear my throat i can't help it i'm

[00:37:47] i was rushing out the door to get here somewhat on time um but i did bring i did bring uh you know i did bring the shirt gotta have the sheriff shirt okay so i like that shirt it's just a heavy white shirt that says sheriff on it and sheriff i was like i didn't want to write chef because i was like i'm not a chef yeah and so like it's a sheriff yeah sheriff dar this sheriff i wear it all the time for every cooking with dar that we do and it also makes a great apron like i just you just

[00:38:13] wipe all your shit on it exactly like flour on or whatever exactly but getting back into the nuts and bolts of cooking with dar right because you wanted to kind of pick our brain about content creation and whatnot so that my first question was length so once we can like you said you establish if it's two three four minutes whatever it is because a lot of people like that short form some people want the long form and you can even do both in some if you consolidate it with like ai clips and you know lightning rounds through it then it's like watch the full clip here so then you can you drive traffic two different places and you can have the long form in the short form i see a lot of

[00:38:41] guys do that that makes a lot of sense and i i think especially now with youtube shorts it makes for great bait to just like get people invested in your channel all of a sudden it's like look at this short that was pretty funny hey look there's a whole video on it yeah and the shorts are the way to go from what we learned from some of the cooking like especially the culinary guys that create they're like they always tell us shorts short shorts and clip it and get the clips out you know to promote it and i think i'm a decent i'm a decent cook but like i'm

[00:39:08] not a chef i'm i'm just getting the basics of trying to understand why i can follow instructions and i can i think i can pump out decent meals especially even with it's kind of a miracle that we haven't had anything be a complete flop on cooking with dar nothing was a disaster it all tastes again we did one i think the biggest disaster well i call it a disaster was the carbonara that i tried to make

[00:39:31] that that is just like using an egg sauce and uh it's you have to you have to cook it very slowly so you don't end up with just noodles and eggs spaghetti and eggs cooked eggs uh and everything that could have gone wrong with that the pasta ended up sitting in the pot for like 45 minutes because we were behind soggy pasta soggy pasta we burned the first round of bacon completely uh so we had to do

[00:39:55] it again we made the egg sauce we mixed in like we even got some uh it's been so long since i made i forgot the the two cheeses that i put in it um that like you have you have to take you have to take your egg yolks stirred and then you add in it's like a it's not parmesan whatever and just you mix it in to make the sauce yeah and we made the sauce and then one of my spices out of the spice cabinet

[00:40:20] when we opened it fell into the bowl and shattered so we had to make shattered the bowl shattered the bowl so the sauce was ruined so we had to do all that again and we ran out of cheese and so and like uh it was a mess it was fun good content but it was it was a disaster so quick question just because you're talking about cheese right now oh god he knows what i'm about this is for happy

[00:44:18] we haven't even ate yet yeah and it was mediocre at best okay but my uh my favorite one by far was the garbage plate it was called this originates from rochester it doesn't sound good i know i know it this originates from rochester new york okay and a garbage plate is just a like a cooked meat sauce

[00:44:43] like think think bolognese but like bolognese but with extra meat so it's just a thick meaty sauce okay plop that in the middle you got some macaroni salad plop that on the side all right okay you got some fried tater uh not tater tots but just like chopped up little little fried uh potato bits okay that sounds a lot that on the side too you stick a piece of texas toast along with it you

[00:45:13] want a little bit of coleslaw sure why not you got macaroni salad but whatever yeah then then on this pile you butterfly cut some hot dogs and you stick them on the grill and sear them and then you put it on top and then you douse it with some onions some hot sauce and some mustard for no reason mustard yeah some mustard okay and that's it that's your plate and so we made this big plate of it and uh

[00:45:40] that thing got housed we cleared the plate it was so good and it's just i i know it sounds crazy no that sounds i know it sounds crazy all the ingredients sound good exactly and so especially those potatoes i want two plops of those potatoes two plops absolutely right away sir like the combination thank you the combination of those ingredients along with some toast on the side and you just eat it it it was delicious and you got the meat sauce underneath it all yeah so the meat

[00:46:07] sauce is like the main thing and then you have all these sides with it and then the bread and the hot dog on top is it like a sloppy joe type of meat sauce because you go like sloppy joe type of meat i'd say that's a pretty like solid consistent kind of consistency sloppy joe like and it was so good and everyone thought it was crazy and like darius this is gross it was it was so good if next time i'm going to like a super bowl game or something i am gonna make it and i promise it's gonna be clear

[00:46:35] damn so heard it here first yeah yeah garbage plate i believe in that but i think it's a decent premise of like i don't want to just go in there and be a clown you know i but i it's like obviously i'm not making goofs you know like when i deep fried the sock that was that was hilarious we uh we had some chicken tenders or not chicken tenders made some uh just chicken cutlets that were fried and that's it added with mashed potatoes and gravy and so on and so forth and then at the end with some leftover

[00:46:59] batter and uh and some egg wash so i had this old tube sock and so we we used the rest of it and then put it in the oil and it actually came out like crispy and we put some garnish on it i think i have a picture of it on my phone but it like if you don't know it's a sock you look at it and go like oh yeah that looks appetizing you look at it closely and they're like wait that's a sock let's see the nike emblem on it or something exactly it was like nicely breaded and with a little bit of parsley on top

[00:47:27] it looked good that's pretty funny so those kind of bits are fun but honestly the the whole premise would just be to explore some viral youtube videos or things that other actual chefs have put out and try my hand out it learn a bit of cooking in the process hopefully teach other people something and then have some goofs and laughs with it it's fun yeah you know it's people have done it before and you can do like one a week and you know like you're saying backstack a couple because you want to launch the channel with some content on it right you know and you can work up that you get the

[00:47:55] hashtags dialed in you got your content ready to go you can draft up like a little press release you know to draw some more seo backlinking to it to get people excited like oh on this date this comes and then dar is going to drop one episode every week and then now people have an idea of what it is like i think you know you're looking for advice i think that's what i would say no that sounds great that sounds good just to get it even if this whole thing flops or i get bored of it after a year i just want to try it i told myself 25 years that i officially put out some some content that i'm happy

[00:49:18] roast some garlic so it gets all buttery and then just spread it on the bread and then just put it together hungry right now mama mia like oh i've never seen anyone make that except now this is gonna go live someone's gonna steal it no i'm kidding no that's all right spaghetti sandwich yeah but i've only seen him make it i was like that looks amazing and that's right up my alley of something that's really that's gonna be cooking with dar that's 100 that's gonna be episode one damn and so the breading that you're gonna use after the egg wash like are do you go panko are you going

[00:49:43] seasoned crumbs like for this one i think it'd be i think this one would be seasoned crumbs probably i think the panko would be a little bit too too crunch just yeah a little bit too crunched flaky kind of wrong yeah um just like your most generic bread like egg wash and just we're not drawing attention to the bread there's always so much flavor in the spaghetti right and the mozzarella that like it's just there to kind of keep it all intact that sounds good and also learn some more

[00:50:10] about like i finally started reading every day again that consistency just a little bit i need to get on that reading trend i started reading uh salt heat fat and acid this is a very popular cooking book that i i'd recommend i don't think it's a bible or anything by any uh by any means but it's a very good book on understanding the why behind cooking as opposed to just a recipe book so even just like

[00:50:34] salt like why why are we using salt what kind of salt should you use in certain instances like how does it work going from like how much salt are you adding uh and the whole spectrum of flavor of just like cardboard to salt lick of like how much salt you need to add uh and it makes perfect sense salt is an essential ingredient and uh one of the one little tip that i saw in there that was just to kind of prove it to yourself like take some grapefruit juice a little bit of lime and uh just try it and

[00:51:04] then do the same thing with just a pinch of salt on it and instantly you're going to notice that the bitterness is gone yeah so little things like that of the the why and i don't think it's going to turn me into an expert but it's i think it's going to help and i think it can help anyone amateur person who hasn't cooked or i'd recommend this to someone who has cooked before who has some recipes i might have to read um yeah just getting a good understanding of the why you're doing the thing

[00:51:30] you're doing and i think you can give a good understanding and like help you improvise a lot more of this needs some salt or maybe a squeeze a lemon here or how to add some zest uh to your flavors and they have a whole chapter on meats as well i like that yeah does it go into like ruse and stuff like that like the y on a rue and uh there isn't butter nothing on rue there's butters in the fat section okay meat is a lot of meat is in the heat they have meat in the salt and in the because

[00:57:09] doing it for like consistently three weeks guess what the cut's gone my feet feel great no more dry toes no more dry toes i've never heard of dry toes before yeah just like dry on the bottom of your foot dry skin dry heels pretty regularly too so it's kind of unfortunate i guess stuff um so yeah but the consistency paid off the cuts paid off yeah so moisturize your toes guys or read the book or do that thing but keep up with it that's a lot of powerful advice right there i like that moisturize your toes and never give up yeah exactly i mean that's full that's full send buddy
